The Protected Designation of Origin forces cheese factories to use raw and skimmed milk from cows that can only be fed naturally, which causes its flavor to vary depending on the seasons in which it is produced. Its pasta is extra-hard, granulated, cooked and pressed. It has a multitude of well-defined flavors: raisins, dried fruit and wine, with a long aftertaste. Minimum cure of 18 - 22 months.
